Acorn meal is made from ground acorns; further grinding turns the meal to flour. Acorns are nuts that are grown and harvested from the oak tree. Acorns naturally have tannin, which make them quite bitter. The tannins must be removed by soaking in water before the acorn meal is eaten. Red and black oak acorns higher tannin levels than those from white oaks and required longer soaking.
