Ingredients[]

1 1/4 c all-purpose flour 1/2 ts Baking soda 1/2 ts Ground cinnamon 1/4 ts Salt 1/4 c Butter or margarine 1 Egg; beaten 1/2 c Applesauce 1/3 c Light molasses 1/4 c Raisins 3/4 c Sifted powdered sugar 4 ts Lemon juice

Directions[]

  1. In a medium mixing bowl combine flour, baking soda, cinnamon, and salt.
  2. Cut in butter or margarine till the mixture resembles coarse crumbs.
  3. In a small mixing bowl stir together egg, applesauce, and molasses
  4. Stir liquids into flour mixture just till moistened.
  5. Stir in raisins.
  6. Turn into a greased and floured 8x8x2-inch baking pan.
  7. Bake in a 350F oven for 25 to 30 minutes or till a wooden toothpick inserted in the center comes out clean.
  8. Cool in the pan 15 minutes. Remove from pan, if desired.
  9. Combine powdered sugar and lemon juice; spread over warm cake.
  10. Serve warm or cool.
