Used as a name for a sauce, it is really a method for cooking fish, which originated in Livorno (Leghorn) in Tuscany. Pieces of fish are fried in extra virgin olive oil flavored with garlic; these are then served with garlic and tomato sauce and generously covered with the chopped parsley.
