- 3 oz sugar-free instant vanilla pudding
- 1 tbsp lemon juice
- 1 tsp fresh lemon peel
- ½ tsp coconut extract
- 8 oz canned pineapple tidbits
- 1 cup assorted sliced fruit 
- ¼ cup mini marshmallows
- Make pudding according to package directions. Stir in lemon juice, peel and extract.
- Reserve ¼ cup for topping. Spoon remaining pudding equally into 4 dessert bowls.
- Toss remaining ingredients. Spoon on top of pudding. Drizzle with reserved pudding.
