- 1⅓ cup buttermilk at room temperature
- 1 teaspoon baking powder
- ¾ cup yellow cornmeal
- ¼ flour
- 1 teaspoon salt
- 1 teaspoon sugar
- 1 egg
- 1 tablespoon corn oil

- Whisk together buttermilk and baking soda let sit for 5 minutes.
- Beat egg, stir in oil, add dry ingredients.
- Add buttermilk mixture.
- On hot skillet drop heaping tbsp of batter.
- Serve hot with syrup.
