I have been using this recipe for more than 30 years and my kids grew up on them. It’s easy, no-fail and tastes so good, even plain. There’s no need to buy pancake mix…you have it all in your pantry! - Evangeline Boston

  1. In a large bowl, combine flour, sugar, baking powder and salt; mix well and set aside.
  2. In a separate bowl, whisk together eggs, milk and melted butter.
  3. Add egg mixture to flour mixture; stir until all big lumps are gone.
  4. Stir in optional ingredients, if desired.
  5. Spoon batter onto a greased hot griddle by 1/4 cupfuls.
  6. Cook until golden on both sides.
  7. Serve topped with butter and syrup.
  8. Leftover pancakes freeze well.

Yield: Makes 12 to 15, 5-inch pancakes
