Ingredients[]
- 2 c. all-purpose flour
- 1/2 c. sugar
- 4-1/2 t. baking powder
- 1 t. salt
- 2 eggs, beaten
- 2 c. milk
- 1/4 c. butter, melted and slightly cooled
- Optional: 1/2 c. blueberries, chocolate chips or chopped pecans
- Garnish: butter, pancake syrup
Directions[]
- In a large bowl, combine flour, sugar, baking powder and salt; mix well and set aside.
- In a separate bowl, whisk together eggs, milk and melted butter.
- Add egg mixture to flour mixture; stir until all big lumps are gone.
- Stir in optional ingredients, if desired.
- Spoon batter onto a greased hot griddle by 1/4 cupfuls.
- Cook until golden on both sides.
- Serve topped with butter and syrup.
- Leftover pancakes freeze well.
Yield: Makes 12 to 15, 5-inch pancakes
