1. Slice off top of apple; remove core.
  2. Prick outside with sharp fork.
  3. Place apple in tall narrow bowl.
  4. Combine orange and lemon juice; pour over apple.
  5. (add extra water if apple is not covered).
  6. Marinate in refrigerator 4-5 hours.
  7. Combine raisins, celery, and applesauce.
  8. Allow to mellow at room temperature 2 hours.
  9. Chill thoroughly.
  10. Drain apple.
  11. Cut apple into 8 sections, slicing almost to the bottom.
  12. Fill with applesauce mixture.
  13. Place on crisp lettuce leaf.
