This is a recipe I obtained from an Estate sale. I obtained it when I purchased the family collection from the Wasters Estate in Van, Texas in 1992.

Ingredients[]
- ¼ cup butter, softened
- 1 cup sugar
- 1 egg
- 1 cup all purpose flour
- 1 teaspoon salt
- 1 teaspoon ground cinnamon
- 2 tablespoons hot water
- 1 teaspoon vanilla extract
- 3 cups peeled diced cooking apples
- ½ cup chopped pecans
Rum Butter Sauce[]
- ½ cup firmly packed brown sugar
- ½ cup sugar
- ¼ cup butter or margarine, softened
- ½ cup whipping cream
- 1 tablespoon rum
Directions[]
- Cream butter then gradually add sugar beating at medium speed of an electric mixer.
- Add egg and beat until blended.
- Combine flour, salt and cinnamon then mix well.
- Add to creamed mixture then beat on low speed of an electric mixer until smooth.
- Stir in water and vanilla.
- Fold in apples and pecans then spoon into a greased and floured plate.
- Bake at 350 °F for 45 minutes.
Rum Butter Sauce[]
- To make sauce combine first 4 ingredients in a small saucepan and mix well.
- Bring to a boil and cook 1 minute.
- Stir in rum then pour over cake.
