Rice, papaya, and coconut milk might seem like an odd combination. The mixture is, however, a delicious one.



  1. Place the rice, ¼ cup water, salt, cinnamon, and coconut milk in a medium-size pot and bring to a boil.
  2. Cover, reduce heat, and cook for 20 minutes.
  3. Fluff the rice with a fork and let stand for 10 minutes.
  4. Mash half the papaya and mix it and the papaya cubes with the rice.
  5. Serve hot.
