Tamarind juice

  1. Break up the dry tamarind into small pieces, place in a large bowl, cover with water and soak for 12 hours or over night.
  2. Pour the tamarind with its water in a large saucepan and boil for 5 minutes, removing any froth.
  3. Pour through sieve and discard stones.
  4. Return to saucepan and add Sugar. Mix on low heat until mixture begins to thicken.
  5. Add lemon juice and boil together for 5 minutes stirring occasionally.
  6. Pour the liquid through a sieve, then leave to cool for 1 hour. Place in fridge for 1 hour.
