A traditional Amhari Ethiopian vegetable bowl.

  • Yields 8 servings



  1. Peel all vegetables, cut into small cubes.
  2. Peel and mash the garlic.
  3. Heat oil in a large pan and add vegetables.
  4. Cover and saute 2 – 3 minutes.
  5. Add the ginger, turmeric, pepper and salt and mix well.
  6. Add the water, stir and cook over very low flame for 30 – 40 minutes.
  7. Serve hot.
