  1. Bake the aubergine in a 475°F oven until skin turns dark brown.
  2. Cool and peel.
  3. Chop the aubergine until very smooth.
  4. Stir in the onion, oil, lemon juice, salt, pepper and sugar.
  5. Chill.
  6. Serve with dark bread and wedges of tomatoes.
