Austrian Apple and Potato Salad

  1. Combine the apples and the potatoes in a bowl.
  2. Whisk together the vinegar oil and the salt and pepper until well blended.
  3. Pour over the apples and potatoes and toss gently but thoroughly.
  4. Adjust seasoning and garnish with beets and sliced egg.
