Ingredients[]
- 2 lbs boneless grouper
- 1 medium onion, chopped
- 2 ribs celery, chopped
- 1 medium bell pepper, minced
- 2 medium chopped potatoes
- 4 cups diced tomatoes
- 5 cups fish stock
- ½ tsp thyme
- ½ tsp allspice
- 2 scotch bonnet chiles
- 1 bay leaf
- 1 tbsp lime juice
- salt and pepper to taste
- 1 tbsp seasoning salt
Directions[]
- Dice the fish into approximately ½ inch pieces and place in mixing bowl.
- Marinate with lime and spices and place in fridge for 2 – 3 hours.
- Bring fish stock to a boil.
- Add all ingredients and simmer for 1 hour, stirring occasionally.
