Ingredients[]
- 3 cups cooked rice
- 1 1/2 to 2 cups cooked Chicken cubes
- 1 cup sliced celery
- 1/2 cup diced cooked Ham
- 1/4 cup sliced ripe olives
- 1 tablespoon minced Onion
- 3/4 to 1 cup Mayonnaise
- 4 avocados
- 2 tablespoons lemon juice
- Mayonnaise (optional)
Directions[]
Combine rice, Chicken, celery, Ham, Onion and Mayonnaise in large bowl; toss lightly. Chill. Cut avocados in half, seed, and peel; brush with lemon juice. Spoon salad into avocado halves. Top with Mayonnaise, if desired.
