- 4 small California avocados peeled and divided
- 1 Tbsp lemon juice
- 3 Tbsp Dijon mustard
- ¼ Cup Mayonnaise
- 12 sourdough bread slices
- 3 (3/4 ounce) packages arugula
- 4 tomatoes, sliced
- 1 tsp salt
- ½ tsp of pepper
Directions[]
Process 1 avocado and next 3 ingredients in a food processor until smooth, stopping to scrape down sides.
Spread mixture evenly onto bread slices.
Top half of slices with arugula and tomato; sprinkle evenly with salt and pepper.
Cut remaining three avocados into slices, and arrange on tomato; top with remaining bread slices. Serve immediately.
