  1. Cream sugar and butter, add the 2 eggs and avocado and mix well.
  2. Add the baking soda to the buttermilk and add to the batter.
  3. Add spices to flour and add to the batter all at once and mix well.
  4. Dust the raisins and walnuts lightly with flour and add to the batter.
  5. Pour into well-greased pyrex pan (8”x10”) and bake at 350°F for 35 – 40 minutes (this can be stored of frozen; however, it is delicious served warm with or without a tart lemon sauce).
  6. Server lemon sauce over the cake.

  1. Mix sauce ingredients together.
  2. Bring to a boil, and boil until clear.
