AVOCADO AND TOMATO SALAD

Serves 4

1 small head bibb or green leaf lettuce, outer leaves removed, washed, dried, and torn into bite-size pieces 1 small head red-leaf lettuce, outer leaves removed, washed, dried, and torn into bite-size pieces 1 medium ripe avocado, peeled, pitted, and diced 1-pint grape (or cherry) tomatoes, washed, halved 1/2 cup balsamic vinegar Freshly ground black pepper

Place lettuce in a large bowl and toss with diced avocado and tomatoes. Dress with balsamic vinegar and season with black pepper. Serve immediately.
