Make these snacks when cucumbers are plentiful and large enough to easily hollow out with a spoon. You may make these up to 12 hours ahead of time and chill until serving.

  1. Combine bacon, tomato and greens with mayonnaise.
  2. Season with pepper; set aside.
  3. Peel cucumber.
  4. Trim off ends, and slice in half lengthwise.
  5. Use a spoon to scoop out seeds; discard.
  6. Place cucumber in a glass dish.
  7. Divide blt mixture between segments, mounding in hollowed areas.
  8. Sprinkle with minced parsley or green onion, if desired.
  9. Slice into 2-inch pieces.
