  1. Bake eggplant at 400°F for 45 minutes.
  2. Skin should be charred and the middle soft.
  3. Let the eggplant cool.
  4. Once cooled, scoop out the flesh of the eggplant into a bowl, and mix in the rest of the ingredients.
  5. Blend until smooth.
  6. Serve with pita chips.
