Pair this creamy cheese quiche with a crisp green salad for a simple lunch or supper. It makes a nice brunch entrée, too.

  1. Cook bacon in a large skillet until crisp; remove bacon and drain on paper towels, reserving drippings in skillet.
  2. Crumble bacon, and set aside.
  3. Sauté leeks and garlic in drippings over medium heat 6 to 8 minutes or until tender.
  4. Place pastry shell on a baking sheet.
  5. Sprinkle 3/4 cup cheese in bottom of shell, sprinkle sautéed leeks and bacon over cheese.
  6. Combine eggs and remaining 4 ingredients, stirring well.
  7. Pour into shell; sprinkle with remaining 3/4 cup cheese.
  8. Bake at 375° for 40 to 45 minutes or until set, shielding edges with aluminum foil after 30 minutes to prevent excessive browning.
  9. Let stand 5 minutes before serving.

Yield: 1 (9") quiche
