Pair this creamy cheese quiche with a crisp green salad for a simple lunch or supper. It makes a nice brunch entrée, too.
Ingredients[]
- 4 bacon slices
- 2 1/2 cups sliced leeks (about 3 medium)
- 1 large garlic clove, minced
- 1 (9") frozen deep-dish pastry shell
- 1 1/2 cups (6 ounces) shredded Gruyère cheese, divided
- 5 large eggs, beaten
- 1 cup whipping cream
- 1/2 teaspoon freshly ground pepper
- 1/4 teaspoon salt
- Dash of ground nutmeg

- Cook bacon in a large skillet until crisp; remove bacon and drain on paper towels, reserving drippings in skillet.
- Crumble bacon, and set aside.
- Sauté leeks and garlic in drippings over medium heat 6 to 8 minutes or until tender.
- Place pastry shell on a baking sheet.
- Sprinkle 3/4 cup cheese in bottom of shell, sprinkle sautéed leeks and bacon over cheese.
- Combine eggs and remaining 4 ingredients, stirring well.
- Pour into shell; sprinkle with remaining 3/4 cup cheese.
- Bake at 375° for 40 to 45 minutes or until set, shielding edges with aluminum foil after 30 minutes to prevent excessive browning.
- Let stand 5 minutes before serving.
