  1. In a skillet over medium heat, cook bacon until crisp; drain on paper towels.
  2. Meanwhile, in a large bowl, stir together flour, baking powder, salt and pepper.
  3. In a separate bowl, mix together milk, egg and melted butter.
  4. Add milk mixture to flour mixture; stir just until moistened.
  5. Fold in bacon and cheese just until combined.
  6. Fill greased or paper-lined muffin cups 2/3 full.
  7. Bake at 400 degrees for 20 to 25 minutes, until lightly golden.

Yield: Serves 6
