Ingredients[]
- 1/2 lb. bacon, diced
- 2 c. all-purpose flour
- 2 t. baking powder
- 1/4 t. salt
- 1/4 t. pepper
- 1-1/4 c. milk
- 1 egg, beaten
- 1/4 c. butter, melted and slightly cooled
- 3/4 c. shredded Cheddar cheese
Directions[]
- In a skillet over medium heat, cook bacon until crisp; drain on paper towels.
- Meanwhile, in a large bowl, stir together flour, baking powder, salt and pepper.
- In a separate bowl, mix together milk, egg and melted butter.
- Add milk mixture to flour mixture; stir just until moistened.
- Fold in bacon and cheese just until combined.
- Fill greased or paper-lined muffin cups 2/3 full.
- Bake at 400 degrees for 20 to 25 minutes, until lightly golden.
Yield: Serves 6
