Bak Kut Teh is a hearty Malaysian herbal soup made with an assortment of Malaysian and Chinese spices. Believed to possess capabilities to deter cold, and other bodily ailments, this traditional soup is not only healthy but also extremely flavourful.
Ingredients[]
- 500g pork ribs with bones
- 20g whole garlic with husk
- 10g White peppercorns, whole
- 20g rock sugar
- 10g bak kut teh spices
- 2l water
- 20ml dark soy sauce
- 10g red chile
Directions[]
- Blanch the pork ribs and bones in boiling water for 5 minutes
- Remove the ribs and bones, and rinse with water; put the ribs aside
- Place the bones in a stockpot with water, together with bak kut teh spices, white peppercorn, and whole garlic
- Bring to a boil; reduce the heat, and simmer on low for 3 hours
- Place the pork ribs in the stock, and simmer for an additional hour
- Add sugar and season to taste
- Strain the stock
- Discard the bones.
- Set the pork ribs aside to cool
- Serve the broth with the ribs, steamed rice, yutiao, soy sauce and cut up red chiles
