Tasty oven baked chicken featuring vegetables, bread crumbs and cheese

(You can prepare this meal with or without vegetables)

Serves: 4 - 6

Cook Time: 50 - 60 min

Ingredients[]

  • 3 - 4 large chicken brests skinned & trimmed of fat
  • 2 bay leaves
  • 2 eggs
  • 1 1/2 cups low fat milk
  • 1 tbls parsley
  • 1 cup Italian salad dressing
  • 1 package dry onion soup mix
  • 3/4 tbls Tony's creole seasoning (or salt & pepper)
  • 1 (4.5-ounce) can mushrooms, drained
  • 2 medium tomatoes, quartered
  • 1 can new potatoes (and other vegetables if desires)
  • 1 cup plain bread crumbs, crushed French fried onions or crushed croutons (your choice of 1 or any blend)
  • 1 1/2 cups shredded chedder cheese
  • non-stick spray

Directions[]

  1. Slice chicken into 1 to 2 inch strips
  2. Combine milk, eggs, seasoning & 1/2 of salad dressing in a 1 1/2 qt. bowl
  3. Put chicken in bowl and place in fridg. for 1 hour
  4. In a greased 13 x 9 x 2-inch baking pan, arrange chicken; tuck bay leaves around chicken
  5. In a small bowl, combine the salad dressing, onion soup mix with 1/3 cup of marinade (after chicken is removed)
  6. Remve chicken from marinade and dip into bread crumbs coating both sides well
  7. Spray baking dish and place chicken spaced evenly into dish
  8. Preheat oven to 375 deg
  9. Pour mixture over chicken. Try not to disturb coating
  10. Bake uncovered in preheated oven for 45 minutes
  11. Combine all vegetables, spread over dish, then sprinkle cheese over entire dish
  12. Bake an additional 15 – 20 minutes or until cheese is melted
  13. Enjoy.
