  1. Sauté onions, celery and tomatoes in butter until tender.
  2. Add all juices, garlic and bay leaf.
  3. Cook this for 3 minutes over medium heat.
  4. Place fillets in greased baking dish.
  5. Season.
  6. Pour sauce over the fish.
  7. Bake at 350°F about 20 minutes, until fish is done or opaque.
