Baked Lemon Pudding


This rich, fruit-based pudding achieves a perfect balance between sweet and sour.



  1. Mix sugar and cornstarch.
  2. Add milk, egg yolks, lemon juice and lemon rind.
  3. Fold in stiffly beaten egg whites.
  4. Pour into a buttered baking dish and place in a fresh pan of hot water.
  5. Bake at 300° F for one hour or until pudding leaves sides of the baking dish.
  6. May be topped with whipped cream.
