2 1/2 C. pancake mix
1 1/2 C. milk 2 eggs 3 T. sugar 1 T. vegetable oil 1 t. cinnamon 1 1/2 C. chopped apples
Preheat oven to 425. Coat a 10x15 baking sheet with nonstick cooking spray. In a large bowl, whisk together all ingredients except the apples until smooth. Stir apples into the batter and pour onto the baking sheet. Bake 12-15 minutes or until pancake is lightly browned on top. Cut into squares and serve.
