  1. Wrap shad roe with bacon and keep in place with a toothpick.
  2. Place in a 350 °F oven until the bacon is sizzling.
  3. The bacon should be a minimum 155 °F and the roe 145 °F.
  4. The roe should be seared on the outside but still moist on the inside.
