This is a very traditional Dutch recipe, which is hardly every made anymore. Please do not read if you have a weak stomach.

  1. Wash the pig's head
  2. Add the ham and salt to taste, and cover with water
  3. Cook until tender
  4. Take the meat off the bone and mince it together with the ham
  5. Season to taste with salt and pepper
  6. Add the remaining water to the cooking water, and return to the boil
  7. Add the diced meat and return to the boil.
  8. Mix in flour until the mixture is stiff. Add more salt if necessary.
  9. Transfer into broad shallow dishes which have been dusted with flour, and leave to cool.
  10. To serve, cut the Balkenbrij into slices of about a finger thick, coat with flour, and fry quickly in lard or butter.
