1. Toss together first 4 ingredients place in an aluminum foil-lined baking pan.
  2. Bake at 425°F for 25 to 30 minutes or until lightly browned, stirring once.
  3. Cool.
  4. Mash avocados in a medium bowl stir in onion mixture, lemon juice, salt, and Italian seasoning.
  5. Chill 1 hour.
  6. Serve with chips.
