Ingredients[]
- 1 large purple onion, chopped
- 2 garlic cloves, chopped
- 2 tbsp balsamic vinegar
- 1 tbsp olive oil
- 4 small California avocados, peeled
- 1 tbsp lemon juice
- ½ tsp salt
- ½ tsp dried Italian seasoning
- tortilla chips
Directions[]
- Toss together first 4 ingredients place in an aluminum foil-lined baking pan.
- Bake at 425°F for 25 to 30 minutes or until lightly browned, stirring once.
- Cool.
- Mash avocados in a medium bowl stir in onion mixture, lemon juice, salt, and Italian seasoning.
- Chill 1 hour.
- Serve with chips.
