Okra in oil.




  1. Fry the okra in oil.
  2. Remove and put on paper towels.
  3. Fry onions in oil until transparent.
  4. Add the dried coriander and garlic. Stir for 2 minutes until scented.
  5. Add the tomatoes. Cook over medium heat for another 2 minutes.
  6. Add okra, salt, sugar, allspice, chile, and water.
  7. Bring to a boil over medium heat and cook for 25 minutes or until the okra is tender.
  8. Add fresh coriander and boil for 2 minutes.
  9. Remove chile and serve cold.
