Makes 6 servings.



  1. In small bowl, combine bananas and rum.
  2. Combine ½ cup brown sugar, ½ cup cream and butter in 2-quart saucepan.
  3. Cook over medium-high heat until boiling 2 to 3 minutes, stirring constantly.
  4. Add pecans.
  5. Cook until slightly thickened 1 to 2 minutes, stirring constantly.
  6. Remove from heat and stir in banana mixture.
  7. Add rice; mix well.
  8. Beat remaining ½ cup cream until soft peaks form.
  9. Add remaining brown sugar; beat until stiff peaks form.
  10. Serve pudding topped with whipped cream.
