This recipe came from an estate sale. I obtained it when I purchased the family collection from the Keller Estate in Arlington, Texas in 1994.

Ingredients[]
- ¼ cup sifted cake flour
- 2 teaspoon baking powder
- 1 teaspoon baking soda
- ⅓ teaspoon salt
- ¼ cup dairy sour cream
- 2 cups mashed ripe bananas
- 1 cup unsalted butter softened
- 1½ cups sugar
- 3 eggs
Orange Cream Frosting[]
- ¼ cup unsalted butter softened
- 1 pound icing sugar
- ¼ cup orange juice
- 2 tablespoons grated orange rind
- shredded orange rind
- chopped pistachios or walnuts
Directions[]
- Preheat oven to 350°F.
- Generously grease jelly roll pan.
- Sift dry ingredients together onto wax paper.
- In small bowl stir together sour cream and banana.
- In large bowl of electric mixer beat together butter, sugar and eggs for 3 minutes.
- Stir flour mixture alternately with banana mixture into butter mixture.
- Beat by hand after each addition until batter is smooth.
- Pour batter into prepared pan and smooth top with spatula.
- Bake in preheated 350 oven for 30 minutes.
- Cool completely on a wire rack then top with frosting.
Orange Cream Frosting[]
- To make frosting beat butter until fluffy.
- Beat in icing sugar alternately with juice until smooth and spreadable.
- Fold in grated rind then spread evenly over top of cake.
- Garnish with nuts.
