Ingredients[]
- 2 teaspoons olive oil
- 1/2 cup chopped onion
- 2 garlic cloves, minced
- 3 cup fresh pink-eyed peas
- 3 cups water
- 3 bacon slices
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
Directions[]
- Heat oil in a large saucepan over medium-high heat.
- Add onion and garlic; sauté 2 minutes.
- Add peas, water, and bacon; bring to a boil.
- Reduce heat; simmer, partially covered, 30 minutes or until tender.
- Discard bacon.
- Stir in salt and pepper.
Yield: 6 servings (serving size: 1/2 cup)
