  1. Marinate the fish in the oil and lemon juice for at least 30 minutes before grilling.
  2. Grill for 10 – 15 minutes, turning once.
  3. The length of time depends upon the thickness of the fillet.
  4. Heat the butter in a saucepan and sauté the garlic for about 3 minutes, stirring frequently on low heat.
  5. Do not let it brown.
  6. Add the basil and a dash of cayenne pepper.
  7. Remove from the heat.
  8. Drizzle the garlic butter over the top of the fish just before serving.

Notes Edit

  1. You can substitute orange roughy, snapper, halibut or seabass filets.
