Batas à Portuguesa

Description

Portuguese fried potatoes. The secret here is the potatoes are fried in olive oil.

• serves 4

Ingredients

• 57 g butter
• 57 g olive oil
• 750 g potatoes, peeled and sliced (¼" thick rounds or like French fries)
• ½ level teaspoon salt
• ½ freshly ground black pepper
• 1 level tablespoon finely of chopped parsley

Directions

1. In a pan heat butter and oil.
2. Fry potatoes on both sides until golden brown.
3. Season potatoes with salt and pepper, transfer to a heated platter and serve immediately sprinkle with parsley.
