Bean Tostadas

1 cup canned refried beans 1 T. oil 6 frozen tortillas, thawed 1 cup shredded lettuce 1 large tomato, chopped 1/2 cup shredded cheddar cheese Bottled Tabasco sauce, optional

Heat beans over low heat in pan for about 5 minutes or until heated through. Heat oil in skillet over medium heat until it sizzles and fry the tortillas for 1 minutes on each side. Drain on paper towels. Spread some beans on each tortilla. On top of the beans, sprinkle shredded lettuce and some tomato, and on top of the tomato, sprinkle some cheese. If you like spicy food, you may wish to put a few drops of Tabasco sauce on your tostada. Serves 2 to 3 Source: My Old Recipes
