Beans and Rice Ole

One 19 oz. can red kidney beans, rinsed and drained 2 cups cooked brown rice 3/4 cup salsa 1/4 cup minced parsley 3/4 cup shredded nonfat cheddar cheese

Preheat oven to 350. In a medium bowl, combine the beans, rice, salsa and parsley; transfer to a 2 quart casserole. Sprinkle with the cheese and bake, uncovered, until the mixture is heated through and the cheese is melted, about 20 minutes. Serves 4 Source: Weight Watchers
