Beef Goulash with Paprika

  1. Cut meat in cubes.
  2. Sauté onions in small amount of oil.
  3. Remove from flame; add paprika.
  4. Stir briskly to keep from burning.
  5. Add meat; braise slowly, covered, about 1½ hours.
  6. Add sauerkraut; cook ½ hour longer;.
  7. Stir in sour cream.

  1. Boiled potatoes, polenta, or dumplings are good companions to serve with this.
