Here's a finger food that's great for a house full of kids or to use as an appetizer. Blue corn tortilla chips add more flavor to this casual favorite. This dish works best when it is served immediately. For 4 people, just add soup and you have a complete meal.

  1. Cook beef, cumin and chili powder in a large skillet over medium- high heat 5 to 10 minutes or until browned, stirring to crumble.
  2. Drain well.
  3. Stir in beans and cook until thoroughly heated.
  4. Layer ½ tortilla chips, ½ cup beef mixture, ½ cup cheese, ½ cup lettuce and ½ cup tomato on a large platter.
  5. Repeat with remaining ingredients.
  6. Garnish with green onions, cilantro, olives, salsa and sour cream, if desired.
