BEER BATTER BREAD
2 cups bread flour (all purpose flour)
1/2 cup whole wheat flour
2 T. sugar
1 tsp. caraway seeds
3/4 tsp. salt
1 envelope quick-rise yeast
1 cup beer
1 T. unsalted butter
1 T. molasses
1 egg
Coat the inside of a 9 x 5 x 3 loaf pan. Combine flour, whole
wheat flour, sugar, caraway seeds, salt and yeast in a large
bowl. Combine beer, butter and molasses in a small sauce pan.
Heat to 125-135 degrees and pour into the dry ingredients. Add
the egg. Mix at low to blend. Then beat at medium speed for 2
minutes. Scrape down sides of bowl as necessary. Then make one
large mass of the dough. Cover and let rise for 30 minutes in a
warm place. Beat the dough for a few seconds and scrape into a
prepared pan. Smooth top with wet spatula. Cover and let rise
again in a warm place for an additional 15 minutes. Preheat
oven to 375 degrees. Bake bread for 35 minutes. Remove from
pan and put back in oven for 5 minutes, until loaf sounds
hollow. Take out and cool on a wire rack.
When we are grateful for the good we already have, we attract more good into our life. On the other hand, when we are ungrateful, we tend to shut ourselves off from the good we might otherwise experience. ~Sylvia
