  1. Cut a circle from top of each cheese, about ½-inch in from sides.
  2. Scallop the edges for an elegant presentation, discard removed wax.
  3. Scoop out cheese, leaving approximately a ½-inch shell combine cheese, sour cream, beer, and chives in a food processor.
  4. Process until smooth.
  5. Spoon back into shells.
  6. Cover and chill for 2 – 96 hours.
  7. Serve slightly chilled or at room temperature.
