1. Drain beets and save liquid.
  2. Combine sugar, potato starch and salt in a saucepan.
  3. Stir in beet juice, cook over medium heat, stirring constantly until very thick.
  4. Add orange juice, rind, vegetable shortening and sliced beets.
  5. Mix until beets are well coated.
  6. Heat thoroughly and serve.
