This recipe came from an estate sale. I obtained it when I purchased the family collection from the Sanderson Estate in Bonham, Texas in 1984. Notation on card indicates this came from a 1961 Cookbook entitled "Recipes from the Old South". After seeing all of these recipes from this Estate, I went out and purchased this cookbook and it is loaded with really good classics. Tried and true. A real keeper
Ingredients[]
- 10 beets sliced
- 1 small white onion, grated
- 1 tablespoon vinegar
- 3 tablespoons brown sugar
- 1 tablespoon melted butter
- juice 1 orange
- grated riind from 1 orange
- Salt and pepper to taste
- Dash of Tabasco
Directions[]
- Boil beets just long enough to peel easily.
- Slice and mix all ingredients and place in saucepan.
- Cover tightly and simmer for 15 minutes or until beets are tender.
- Serve immediately.
