Bel Gioioso Mozzarella Pizza

2 refrigerated pizza crusts (13 inch) 3 T. olive oil, divided 4 ripe plum tomatoes, cut into thin slices 2 cups diced fresh mozzarella cheese 12 fresh basil leaves 1/2 t. salt

Preheat oven to 425. Place pizza crusts on lightly oiled pans. Brush each with 1 T. olive oil. Place tomato slices on crusts; layer with mozzarella cheese and basil leaves. Sprinkle with salt and remaining 1 t. olive oil. Bake 25 to 30 minutes or until top and bottom of crusts are nicely browned. Cut into wedges and serve. makes 2 pizzas Source: Unknown
