That cheese you might have tasted at grandma's place...here is a recipe to make a fine veggy cheese, belgian style, for any moment of your day ! Enjoy !

Ingredients

  • 2 Cups Lowfat Cottage Cheese
  • 1 1/2 Teaspoons White Wine Vinegar -- or champagne vinegar
  • 1 Small Shallot -- finely chopped
  • 1 Tablespoon Parsley -- finely chopped
  • 1 Tablespoon Chervil -- finely chopped
  • Salt And Pepper -- to taste
  • 1 Tablespoon Hazelnut Oil -- optional
  • 6 Slices Good Bread -- fresh or toasted
  • 1 Medium Black Radish -- thinly sliced
  • Vegetable Crudites -- optional

Directions

In blender, blend cottage cheese until smooth. Remove to large bowl, add vinegar, shallot, parsley, and chervil. Season with salt and pepper. Add hazelnut oil if using. Serve on thick slices of good bread and decorate with the radish slices.
