Delicious onion soup Belgian style ! Together with the Parmesan cheese and French bread it's one of the most made soups in Belgium ! Enjoy !

  • Makes 4 servings.



  1. In a large saucepan, saute onion in butter until soft.
  2. Add chicken stock, beer, salt and pepper.
  3. Cover and simmer about 30 minutes.
  4. Adjust seasonings.
  5. Broil bread on one side about 3 inches from heat.
  6. Turn, sprinkle generously with Parmesan cheese, and broil 1–2 minutes more, until lightly browned.
  7. Pour soup into bowls.
  8. Add cheese-covered bread.
