- 1 cup sugar 225 g
- ½ cup vegetable oil
- margarine 112 g
- 2 eggs
- 2 cups flour 450 g
- 2 tbsp baking powder 10 ml
- ½ tsp baking soda 2 ml
- 1 tsp cinnamon 5 ml
- 1 tsp grated orange peel 5 ml
- 2 cups grated carrots 450 g
- 1 cup raisins (optional) 225 g

- Preheat oven to 350°F /180°C.
- Prepare a small cake tin (8" x 2").
- Grease and flour tin.
- cream fat and sugar until well mixed.
- Beat eggs.
- Add to fat and sugar mixture.
- Mix well.
- Add dry ingredients to egg mixture (fold in).
- Add grated orange peel and grated carrots.
- Put batter in greased pan.
- Bake at 350°F /180°C for 35 – 40 minutes.
