Make-ahead recipes are ideal for the holidays - here's a brunch option that you put together the night before and bake the next morning. Serve these sandwiches with your favourite syrup.
Ingredients[]
- 8 large eggs
- 1/2 cups (375 ml) milk
- 2 tbsp (30 ml) maple (or maple-flavoured) syrup
- 1 tbsp (15 ml) vanilla extract
- 1 tsp (5 ml) ground cinnamon
- 1/8 tsp (0.5 ml) salt
- 6 French bread slices (3/4 inch, 2 cm, thick)
- 1 cup (250 ml) fresh (or frozen) blueberries
- 4 oz (125 g) block cream cheese, diced
- 6 French bread slices (3/4 inch, 2 cm, thick)
- 1/2 cup (125 ml) maple (or maple-flavoured) syrup
Directions[]
- Beat first 6 ingredients in large bowl until smooth.
- Dip first amount of bread slices into egg mixture.
- Arrange in single layer in well-greased 9 x 13 inch (23 x 33 cm) pan.
- Scatter blueberries and cream cheese over top.
- Dip second amount of bread slices into egg mixture.
- Arrange over cream cheese mixture.
- Pour any remaining egg mixture over sandwiches.
- Chill, covered, overnight.
- Bake, covered, in 350°F (175°C) oven for about 30 minutes.
- Remove cover.
- Bake for about 30 minutes until golden.
- Let stand for 5 minutes.
- Drizzle with second amount of syrup.
