Ingredients[]
- 3 c. broccoli, chopped
- 2 c. cauliflower, chopped
- 4 c. chicken broth
- 2 c. milk, divided
- 2 c. cooked chicken, diced
- 1 t. salt
- 6 T. cornstarch
- 1 c. shredded Cheddar cheese
Directions[]
- In a large saucepan over medium-high heat, cook broccoli and cauliflower in broth until tender.
- Do not drain.
- Reduce heat to low; add 1-1/2 cups milk, chicken and salt.
- In a small bowl, stir cornstarch into remaining milk; mix until smooth and stir into mixture in saucepan.
- Cover and cook over low heat, stirring frequently, until soup is hot and thickened.
- Stir in cheese until melted.
Yield: Makes 6 servings
